Nicky’s Biscuits

Step 1: Gather your ingredients

Make sure you get an adult to help you first!

For the Biscuits
  • 250g Salted Butter, softened
  • 3/4 cup Icing Sugar
  • 1/2 cup Cornflour
  • 1 1/2 cups White Flour
For the Icing
  • 1 Cup powdered sugar
  • 2 teaspoons cornflour
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Yellow and Purple food colouring

Step 2:

Preheat oven to 150°C bake (140°C fan forced).

Grease your well loved oven tray or line with baking paper.

Cube and beat salted butter and icing sugar until pale and fluffy.

Step 3:

Mix in cornflour and white flour until the mixture comes together and forms a dough.

Step 4:

Put the dough in the fridge until it firms up.

Step 5:

On a floured surface, roll out dough to 1 cm thick and cut into oval shapes using a sharp knife. Sprinkle flour on your knife to prevent the dough sticking.

Step 6:

Place on prepared tray and bake 15-20 minutes, until shortbread is pale but crisp. Cool completely on a wire rack and store in an airtight container.

Step 7: Now for the fun. Icing!

Get your ingredients:

  • 1 Cup powdered sugar
  • 2 teaspoons cornflour
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Yellow and Purple food colouring

Step 8:

Mix powdered sugar, cornflour, vanilla extract and milk together in a large bowl.

When mixed, transfer half of the mixture to a seperate bowl. Set aside a small amount of icing for making the eyes!

Add FIVE drops of purple food colouring to one bowl and FIVE drops of yellow food colouring to the other.

Step 9:

Create a piping bag using either baking paper or a sandwich bag and pipe Kiri and Lou onto the biscuts, using the PRINT OUT as a guide.

Step 10:

If you cut a really small opening in your piping bag, you can get really detailed lines or blobs! Use your small amount of reserved icing for the eyes. For the pupils, I mixed up some blue, red and green food colouring and dabbed it on the eyeballs using a toothpick.

Leave to set for 30 mins!

Send us photos of your biscuits, we'd love to see them!
